Although today cloves are a savory spice used in culinary delicacies all over the world, in ancient times, spices originated on just a few islands in the Indonesian archipelago.
Over the centuries, they came to have an inestimable impact among the nobles of Western Europe, representing a symbol of aristocracy and abundance.
The first mention of cloves is found in Chinese literature, around the 3rd century AD, when the spice called hi-sho-hiang (,bird’s tongue) was used by court officers who, before appearing before their sovereign, were required to chew cloves.
Cloves were used more in medicine than in food preparation. They were valued for their ability to treat a wide range of ailments, from intestinal problems, diarrhea and vomiting, to toothache and abscesses.
In traditional Ayurvedic medicine, they were consumed for their amazing ability to treat colds, asthma, indigestion, vomiting, toothache, laryngitis, low blood pressure and impotence.
In medieval Europe, due to the difficult trade, conditioned by difficult distances, spices were so expensive that they became a luxury item that only the upper class could afford.
As the 11th and 12th centuries progressed, the popularity of Asian spices grew, stimulated by those who returned from the Crusades enchanted by the rich cuisine of Constantinople.
Christopher Columbus himself left the Old World in search of the Spice Islands, the source of the aromatic spice, when he came across the West Indies, and Ferdinand Magellan returned from his expeditions with tons of cloves, thus fully covering the costs of his voyage.
Nowadays, the evergreen clove tree is widespread in tropical climates around the world, where it is cultivated not only for the aroma of its flower buds, but also for the benefits they have on health.
The harvesting of cloves is carried out with great care and patience, when the flower buds are mature, but have not yet had time to open.
After picking, the harvesters separate the buds from the stem and let them dry for several days in the sun, after which they are subjected to the process of steam distillation, in a controlled environment.
The miraculous buds produce up to 20% volatile oil, whose main phytoelement is eugenol, responsible for the characteristic smell and aroma, but also bioflavonoids and vitamins.
